I typically have my root's mail sent to my user or the email that I
read, for example, I typically have in my /etc/aliases:
root: billings
billings: billings at negate.org
(or something like that.)
At a previous job, I had all root mail go to a central mailbox on one
server, where I set up an alias for that address that sent copies to
various interested parties as well as archiving the messages.
