Debian!  "Stable" AKA "Sarge" is rock-solid, and for a mail/web server
you don't need anything cutting-edge.

Debian is FHS-compliant, has a >THRIVING< community and a wonderful
package manager, is a binary distro so updates are quick, and supports
most-current md LVM2 so you can RAID your disks.

Debian has intuitive configuration on par with Red Hat's (I can't
vouch for the GUI tools, however) and safeguards your config files
during updates.  Debian's documentation is very good, and while the
user community can be a bit brusque most folks are helpful and
knowledgeable.

I was a Red Hat user in the late 90s, then switched over to Debian and
loved it.  I converted to Gentoo in 2004, and recently switched *back*
to Debian.  For more user-friendly (read: bleeding-edge and shiny
manga GUI) incarnation, try Ubuntu.  For corporate support, try
Progeny.
