It depends on your audience, but you could cover things such as The Unix Way(tm)
(Many small programs, each performing a task, that can communicate with each
other) and move right into an explanation of why the command line (and thus
scripting) are so powerful (and thus an explanation of toolchains, etc)

Or you could just demonstrate that everything they have in Windows (that they're
afraid they'll lose under Linux) is really there.  Such as email, word processing,
lovely GUIs, games that actually work better in Linux than in Windows (such as
Army Ops), etc ...

But this depends heavily on exactly what kind of target audience you have.
