The question related to sending email, POP3 and IMAP are protocols for
retreiving email from the server which stores your mail. These are
distinct functions.
For the original question, it depends on what you are trying to do. :)
For the basic question, should I use a local MTA (mail transport agent)
such as sendmail to talk to the ISP's SMTP server, or should I configure
your MUA (mail user agent) to talk to the ISP's server directly, probably
the biggest difference you'll see is with the local option, it can queue
outgoing messages and attempt to deliver them for you if the connection is
down. Not all MUA's will do this.
If you choose to go the sendmail route, the option you want to change it
DS in your sendmail.cf. However, I would encourage you to look at
sendmail.mc and learn a bit about generating a sendmail.cf file from those
macros.
