As Jake mentioned, the Asterisk book is great (and free!). If you have
never worked with a PBX before, a lot of the concepts may be foreign, but
they do a pretty good job explaining telecom terms and you should be able
to setup a test box fairly quickly. Digium even sells phones specifically
for Asterisk now, so you don't even need to worry about hardware
compatibility much anymore.
