MediaWiki

In my experience, it just works.  It's incredibly extensible, and actually 
fairly easy to manage.  It also has excellent support to different media 
types as uploads.  The documentation is top notch.

I've played with MoinMoin before, and as much as I love python stuff, it 
just doesn't make the cut.  The system forces names that don't make sense 
and the wikimarkup is a bit odd.  Also, I'm not sure there is a recaptcha 
plugin.

If I had infinite time and resources, I'd probably do twiki because it has 
great team features, unfortunately, that means you need to train your team 
on how to do it.  Also, it's in perl.  Webapps in perl remind me of 1999.
