I've worked with both briefly.  UML was a bit more frustrating to get up and
running, but might give you more freedom to experiment in the end.  

Xen on the other hand can be installed during most linux installs.  Fedora
comes with easy to use GUIs for manipulating the Xen virual machines.    

For what it's worth, I would recommend a look at Solaris Zones.
