1.  X11 (you really should add it in since many people will not have it 
installed and it is required for Gimp and Open Office)

2. Frozen-bubble (fun game for non-techies)

3. Nvu (good Dreamweaver alternative) [http://www.nvu.com/]
4. Camino (faster and prettier than Firefox) [http://www.caminobrowser.org/]
5. NeoOffice (Much better than OpenOffice if they want to keep the look 
and feel and doesn't require X11) [http://www.neooffice.org/]
6. VLC (can play a TON of formats and way better than quicktime)

Those are just a few ideas. I doubt you can fit all of them in but I 
leave it up to you which to put in the CD.

PS: I am right now porting a ton of KDE applications to the Mac 
(including Quanta, KOffice and KTorrent). I might take another week for 
me to get it done. Tell me if you want the binaries ;)
