What kinds of desktop computers would people have?
Their RAM/CPU would limit your choice. Vector Linux
(and Slackware!) would be great if they have 64Mb ram,
but if you have 256Mb to spare, try another one.  
Consider MEPIS, also, a Debian-based distro, very
polished. Its author lives in Morgantown WV. 
But I wonder if your research should concentrate also
on what window environment (KDE, Gnome?) to use (and
which version), themes, etc. Run some "focus groups" 
and do systematic observation of users' behavior for
each configuration tested.
