Firstly, you don't want the source, OO has precompiled
binaries.

To install, it should install to /opt, simply delete
the old binaries, or copy the directory with the old
oo material to some safe place instead...just in case.

Then use the install script that comes with open
office to complete the install

Should word with Red Hat as well.

Again, just to be on the safe side and if you running
locate..run a query thru locate for all open office
material prior to the install and redirect the output
to a file...just in case, youu have a listing of the
old oo files
