The default settings for sendmail in Red Hat 8 and 9 should be suitable 
without changes.
Have you looked at the php website? There are some relevant hints there:
http://us2.php.net/manual/en/ref.mail.php

Have a look at /etc/php.ini, sendmail_path is commented out. It's possible 
that doing so disables mail, but I haven't used php much for years.
