You should be able to edit your master.cf file and add -v to the smtp line:

smtp    unix    -       -       y       -       -       smtp -v

You can add -v twice, but I'm not sure if it would be "-v -v" or "-vv"
You should also be able to add this to other postfix services in master.cf
