802.3ab is the spec that allow GigE to run over CAT5.  As far as the
untwisting goes at the loose end that is inserted into the RJ, the spec
states no more than .5" for CAT5 and 1.0" for CAT3, as someone else has
already stated.  There are probably alot of uncertified CAT5 cabling
systems out there that are not up to spec and would not run GigE reliably
as mentioned.

802.3u is the spec that you will find the use of CAT3-5 for 100MB
installations.
