When I was doing contract sysadmin stuff (and as a disclaimer, it's been 
a while...), I was charging between $50 and $75 per hour.

Personally, I don't think I'd be comfortable with any kind of flat, per 
server (or per network) fee, unless the needs of the client were very 
light.  If you're dealing with a large customer, and a production server 
goes down that they really, really need you to work on basically 24/7 
until it's fixed because they're dead in the water until then, and 
you're only making $50 total for all that work....  That's kind of an 
untenable position to put yourself into....
