One option for hosting is to use a host running User Mode Linux.  This
is essentially a hosted virtual machine where we would have root
access and a dedicated IP address for the box.

This seems like a pretty good option.  There is a list of hosts who
provide these services here:

I've looked it over, and some of them look ok, and some of them look
... not so professional.

So, take a look at the list and see if any of them look good to you,
or if you've heard anything good or bad about any of them.  I haven't,
so I can only go by what their websites look like.
